Strawberry Spinach Salad with Toasted Walnuts
Light, refreshing, and packed with fiber, vitamin C, and healthy fats, this summer salad is bursting with sweet and tart flavors! The toasted walnuts add a delicious crunch, perfectly complementing the juicy strawberries.


Ingredients
2 ½ Tbsp (35 mL) white wine vinegar
¼ tsp (1 mL) salt
½ tsp (2 mL) sugar
½ tsp (2 mL) black pepper
3 ½ Tbsp (50 mL) extra virgin olive oil
8 cups (2 L) baby spinach
2 cups (500 mL) strawberries – sliced
1 cup (250 mL) walnuts – toasted
Fresh mint leaves (optional, for garnish)
Instructions
Prepare the vinaigrette: In a small bowl, whisk together vinegar, salt, sugar, and pepper.
Add the olive oil: Slowly drizzle in the olive oil while whisking continuously to create an emulsion.
Assemble the salad: In a large bowl, combine the baby spinach, sliced strawberries, and toasted walnuts.
Dress & serve: Lightly coat the salad with the vinaigrette and toss gently. Garnish with fresh mint leaves if desired.
Serving Size:
Makes 6 servings (~120 g per serving).
This salad is best served fresh and makes a perfect side dish or light meal!
