Red Cabbage Slaw with Yogurt
This colorful and refreshing red cabbage slaw is light, tangy, and packed with nutrients. Red cabbage has nearly twice the vitamin C of green cabbage, making this a fantastic immune-boosting side dish. The creamy yogurt dressing balances the vibrant flavors perfectly.


Ingredients
- 4 cups (1000 mL) red cabbage – shredded 
- 1 yellow bell pepper – thinly sliced 
- ½ red onion – thinly sliced 
- ½ cup (125 mL) fresh cilantro – chopped 
- ½ cup (125 mL) plain yogurt 
- 1 tsp (5 mL) cumin 
- 2 Tbsp (30 mL) lime juice 
- 2 tsp (10 mL) curry powder 
- 1 Tbsp (15 mL) honey 
- 2 Tbsp (30 mL) apple cider vinegar 
Instructions
- Prepare the veggies: In a large bowl, combine shredded cabbage, yellow bell pepper, red onion, and chopped cilantro. 
- Make the dressing: In a small bowl, whisk together yogurt, cumin, lime juice, curry powder, honey, and apple cider vinegar. 
- Combine: Pour the dressing over the slaw mixture and toss well to coat. 
- Season & serve: Taste and add salt and pepper as needed. Serve fresh! 
Serving Size:
Makes 4 servings (~1.5 cups per serving, 140 g each).
This slaw is perfect as a side dish, in wraps, or as a topping for grilled dishes! Enjoy!
