Cobb Salad

If you love loaded salads with a variety of flavors and textures, this Cobb Salad is perfect! Packed with fresh vegetables, protein, and a creamy ranch dressing, it’s an excellent meal prep option for busy weekdays. Feel free to get creative with your toppings!

Ingredients

Salad:

  • 5 cups (1.25 L) spinach – washed and dried

  • 2 cups (500 mL) corn kernels – frozen

  • 1 cup (250 mL) edamame – frozen, shelled

  • 1 cup (250 mL) cucumber – diced

  • 5 hardboiled eggs – sliced

  • ½ cup (125 mL) shredded cheese

  • 1 pint cherry tomatoes – halved

  • ¼ cup (60 mL) red onion – thinly sliced

  • ¾ cup (250 g) sliced lean turkey breast (optional)

  • ½ cup (125 mL) homemade healthy ranch dip

Instructions

  1. Prepare the ingredients: Thaw the edamame and corn by microwaving according to package directions. Slice the hardboiled eggs.

  2. Assemble the salad: Divide the spinach evenly among five plates or meal-prep containers. Arrange the toppings in sections over the spinach.

  3. Serve: Store in the fridge and add the ranch dip only when ready to eat.
