Enjoy a taste of the Mediterranean with this vibrant and refreshing Greek salad. It's packed with bold flavors and colorful ingredients. Tip: To mellow out the sharpness of red onions, soak them in a little vinegar or lemon juice before adding them to the salad.

Ingredients

  • 1 cucumber – chopped into large chunks

  • 1 tomato – cut into wedges or large pieces

  • ½ red onion – thinly sliced

  • 2 oz (56 g) light feta cheese – crumbled

  • ½ cup (125 mL) Kalamata olives – pitted

  • 2 Tbsp (30 mL) olive oil

  • 4 Tbsp (60 mL) red wine vinegar

  • 1 tsp (5 mL) dried oregano

  • Pinch of salt and pepper – to taste

Instructions

  1. Prepare the veggies: Chop the cucumber and tomato into bite-sized pieces. Slice the red onion thinly.

  2. Season & mix: Place the vegetables in a medium-sized bowl, season with salt and pepper, and toss gently.

  3. Add the flavor: Crumble the feta cheese over the vegetables, then add the olives, olive oil, red wine vinegar, and oregano. Stir well to combine.

  4. Let it marinate: For best results, allow the salad to sit for a while so the flavors meld together. The longer it marinates, the better it tastes!
