Chunky Greek Salad
Enjoy a taste of the Mediterranean with this vibrant and refreshing Greek salad. It's packed with bold flavors and colorful ingredients. Tip: To mellow out the sharpness of red onions, soak them in a little vinegar or lemon juice before adding them to the salad.
Ingredients
1 cucumber – chopped into large chunks
1 tomato – cut into wedges or large pieces
½ red onion – thinly sliced
2 oz (56 g) light feta cheese – crumbled
½ cup (125 mL) Kalamata olives – pitted
2 Tbsp (30 mL) olive oil
4 Tbsp (60 mL) red wine vinegar
1 tsp (5 mL) dried oregano
Pinch of salt and pepper – to taste
Instructions
Prepare the veggies: Chop the cucumber and tomato into bite-sized pieces. Slice the red onion thinly.
Season & mix: Place the vegetables in a medium-sized bowl, season with salt and pepper, and toss gently.
Add the flavor: Crumble the feta cheese over the vegetables, then add the olives, olive oil, red wine vinegar, and oregano. Stir well to combine.
Let it marinate: For best results, allow the salad to sit for a while so the flavors meld together. The longer it marinates, the better it tastes!
Serving Size:
Makes 4 servings (~1.25 cups per serving, 179 g each).
